Overnight Oats – Slimming World Friendly Recipes

Oh how my slimming world plan has gone down the pan (again) over the past few weeks.

Another busy month, coupled with working away from home and copious amounts of snot (mainly from me and the small person) do not a clear mind make.

Truth be told – my weight loss has plateaued a little and after having three really spot on weeks and only losing a measly half a pound… yes, I know I said that every loss is great but COME ON… I’ve lost heart a little.

I’ve been reaching for all the the wrong foods and when I go back to class a week on Monday I know I will have done masses of damage. It happens to the best of us. The right thing to do is to get back on track immediately to protect your weight loss.

No dwelling, no guilt… Especially not for over a week. Oops…

One thing I find helps with this is a little secret weapon called Overnight Oats. A lady at work introduced the recipe to me before I’d even gone to my first Slimming World meeting. We tried it as a family and it became a fond work day breakfast favourite. Some jumbo oats, fresh fruit and fat free yogurt of any variety and you have got yourself an easy, tasty breakfast or snack that can be made WELL in advance. Overnight oats keep for 24 hours and are TASTY.

But don’t be fooled – your overnight oats needn’t be ‘over night’ all the time. They can be ready in as little as a few hours.

Due to the excessive amount of batch cooking and bulk buying that I do (I am a busy working mum) we have plastic screw top containers and Kilner vacuum jars in abundance. You don’t need anything fancy to make any of these recipes though – a cleaned out plastic container from last nights Chinese take away will do. Or even just a bowl and some cling film.

Overnight Oats

Toffee Apple

You will need: (to serve 1)

1 Toffee Muller Light Yogurt
1 Whole Apple (any variety) – grated
35g Oats
1/2 Teaspoon of Mixed Spice

A note on grated apple: Because the apple is grated it is now ‘less satisfying’ and should really be synned if you are on the Slimming World plan. I usually count this as 3 syns. To avoid this you could just chop it up!

A note on oats: We always buy jumbo oats. These is no other reason for this other than we find they satisfy our hunger for slightly longer than regular oats. Although Mr Vista does have a wheat allergy and we are a mainly gluten free family we buy the standard oats. We have never found this to be a problem but would not recommend this if on a strict gluten free diet.

Literally throw all of the ingredients into a container, shake until the yogurt coats all of the oats and put into the fridge over night – as the title suggest – for a tasty toffee apple breakfast.

Banana Custard

You will need: (to serve 1)

1 Banana Custard Muller Light Yogurt
1 Small / Medium Banana – chopped
35g Oats

Once again – throw everything into a container, shake until all oats are coated in yogurt and leave over night. Use a toffee yogurt to make this into a Banoffee delight!

Blueberries go with this recipe very nicely too – however note these are no ‘speed’ fruits in this recipe if on a Slimming World plan.

Very Cherry Berry

You will need: (to serve 1)

1 Cherry Muller Light Yogurt
25g Dried Cranberries
35g Oats

If you are following the Slimming World healthy eating plan then you’ll know that you can use the 35g oats in these recipes as your Healthy Extra B. You can also use dried fruit as your Healthy Extra B – but this recipe uses both. I syn in the Craisins – just 4 syns for 25g. I get a bit of a kick out of using my syns for natural ingredients.

Shake. Leave over night. Eat.

Peach Melba

You will need: (to serve 1)

1 Vanilla Muller Light Yogurt
1/2 Tablespoon of peach no added sugar cordial
35g Oats
1/4 Galia Melon to serve

This one is best prepared in a bowl so that the melon can just be thrown on at the last minute to serve. Just like all the other recipes – mix the yogurt, oats and cordial – leave over night – add the fruit before serving and enjoy.
